Sheer Khurma: The Traditional Sweet Dish of Eid-ul-Fitr
Food : Sheer Khurma is one of the most popular desserts prepared during Eid-ul-Fitr. This rich and creamy sweet dish is made with milk, vermicelli, dates, and dry fruits. The word “Sheer” means milk, while “Khurma” means dates. Families traditionally serve this dessert to guests and relatives on Eid morning.
The dish is known for its rich taste and delightful aroma. It can be served warm or chilled according to personal preference. Sheer Khurma is considered a symbol of celebration and togetherness during the festival.
To prepare authentic Sheer Khurma, full-fat milk is used as the main base. Fine wheat vermicelli, also known as seviyan, gives the dessert its texture. Dry dates, called chhuwara, are soaked and chopped before cooking.
A generous amount of cashews, almonds, pistachios, and chironji is added for richness and crunch. Cardamom, saffron, kewra water, or rose water provide a pleasant fragrance and flavor. Some people also use condensed milk, khoya, or sugar to make the dessert sweeter and thicker.
The preparation begins by soaking the dry fruits and dates in warm water. The almonds are peeled and sliced finely along with other nuts.
Next, desi ghee is heated in a pan. The dry dates and chopped nuts are fried gently until golden brown. They are then kept aside.
In a heavy-bottomed pot, full-fat milk is boiled slowly. Cardamom and saffron are added to enhance the flavor. The milk is allowed to simmer until it becomes slightly thick.
Meanwhile, the vermicelli is roasted in ghee for a few minutes until it releases a pleasant aroma. The roasted vermicelli and fried nuts are then added to the milk.
The mixture is cooked together for about five to seven minutes until the vermicelli becomes soft. Finally, condensed milk, khoya, or sugar is mixed in for sweetness. A few drops of kewra water or rose water are added before serving.

Hyderabadi Shahi Sheer Khurma is famous for its extra creamy texture. In this version, a paste made from soaked nuts is added to the milk.
Bengali Semai is usually lighter and often prepared without dates. Coconut flakes are commonly used in this variation.
Kashmiri Sheer Khurma is flavored mainly with green cardamom and is sometimes decorated with edible flower petals.
Sheer Khurma continues to remain a beloved festive dessert across many households during Eid celebrations.
