Egg Ghee Roast: A Traditional Dish Winning Hearts in Local Kitchens
Egg Ghee Roast, a popular coastal delicacy, continues to gain attention among home cooks for its rich flavour and simple preparation. The dish is known for its spicy, tangy taste and its aromatic ghee-based masala.

According to local food enthusiasts, the preparation begins with hard-boiled eggs. The eggs are peeled and lightly pricked so they can absorb the masala. Some cooks also fry the eggs in ghee and turmeric for added flavour.
The masala base is prepared by heating ghee in a pan. Curry leaves and sliced onions are sautéed until they turn golden. Ginger-garlic paste is added next and cooked until the raw smell fades. Tomato purée is then mixed in and cooked until the ghee separates.
Cooks add turmeric, red chilli, cumin and coriander powders to the mixture. The masala is roasted well on a low flame. Salt is added to taste. Some people add a little water or tamarind extract for a smoother consistency.

Mushroom Pepper Fry: A Simple and Flavorful South Indian Dish
A popular South Indian-style dish, Mushroom Pepper Fry is known for its bold flavours and quick cooking method. The dish combines the earthy taste of mushrooms with the strong aroma of black pepper, fennel seeds and curry leaves. It is easy to prepare and is often served as a side dish with rice or roti.

To make this dish, cooks usually begin by freshly grinding black peppercorns and fennel seeds. This spice mix adds a strong and fresh aroma to the fry. In a hot pan, oil and ghee are heated together, followed by mustard seeds, dried red chillies and chopped curry leaves. These ingredients create the base flavour.
Finely chopped onions, ginger and garlic are then added and sautéed until they turn soft and light golden. Sliced mushrooms are cooked on medium-high heat so they release water and then turn slightly brown. Once the mushrooms are cooked well, spice powders such as turmeric, coriander and the freshly ground pepper-fennel mix are added along with salt.

Gobbi Ghee Roast: A Creative Twist on a Classic Dish
A home cook has created a unique and flavourful dish called Vegetarian Cauliflower Ghee Roast, showcasing the richness of Indian spices and the versatility of vegetarian ingredients. The dish was inspired by the popular Prawn Ghee Roast recipe, but the creator wanted a meat-free option for days when they preferred vegetarian food.

Cauliflower, a key member of the cruciferous vegetable family, plays an important role in this recipe. These vegetables usually have a tough stem that is removed before cooking. The cook also mentioned that broccoli can be used as an alternative. Broccoli florets char faster and provide a similar smoky taste.
The recipe uses a special proprietary spice blend, which the creator hopes to market soon. Until then, cooks can replace it with other spice mixes like garam masala or biryani masala. A simple mix of coriander, cumin, turmeric and chilli powder can also give good results. The spice level can be adjusted easily by reducing or increasing the chilli powder.
The key technique in this dish is the ‘roast’ process. The cauliflower florets are fried in hot ghee until they are partly cooked and have charred edges. According to the creator, these charred bits prevent the vegetable from turning soft when mixed with the spices. They also stressed that using ghee is essential to maintain the authentic flavour, otherwise it becomes a regular cauliflower masala.
The recipe includes cauliflower florets, ghee, olive oil, mustard and fenugreek seeds, sliced onions, ginger, garlic, chilli padi, tamarind paste, masala powder, turmeric, water and salt.

To prepare the dish, the cauliflower is first roasted in hot ghee until it turns brown and crusty. The spices and aromatics are then fried separately to form a thick paste. The roasted cauliflower is mixed into this paste and cooked until tender. The dish is served warm with fresh coriander.
This simple yet aromatic recipe highlights how traditional Indian techniques can be adapted to create delicious vegetarian meals.
